I’m having trouble with this plant every time I touch it ...

Your plant is a Peperomia Prostrata & commonly called β€œstring of turtles” as it looks like a turtle shell. I’ve had one looking like yours for around 9 months and had repotted into soil mixes suggested in several types of lighting. Still looks puny and grows slow and sporadic on a windowsill now. PS The String of Turtles doesn’t seem to like being touched at least until it’s hanging off the pot. The semi-Succulent leaves if overwatered get soft (like a Jade plant). Best to try a light chunky soil mix so water passes thru and clay pot is best. Good luck!!
I think this is a string of hearts. It should have a sunny but indirect lit window and let it dry out completely between waterings.

I had one it was doing great with lots of light and weekly watering then spider mites attacked it with a vengeance hope yours survive it’s such a lovely plant
