I'd maybe take the whole thing out of the pot, rinse and clean the roots really well, then clean the pot, replace all of the soil with fresh stuff, and give her a lil trim

Having coffee dumped on it is not what's turning your peace lily yellow... TruthBeTold, Peace Lilies looooove #Nitrogen . The temperature of the coffee may have been disagreeable, but coffee wouldn't cause adverse growing effects.

I would suggest that You uproot your plantbaby to check its roots... ensure that overWATERing has not occurred.
