Fungi tend to appear when the soil is too wet.. maybe water them a bit less?
Did you perhaps buy mycorrhizal fungi to add to the soil or does your soil come with it? If so that's a normal part of the structure sometimes it can cause crystalline formations. When you zoom in it looks like prisms and other shapes formed by the calcium oxalate crystals. It a process called biomineralization and the fungi will actually produce crystals which are harmless to your plants. A lot of it has to do with the mineral content of your soil.

It's actually an amazing phenomenon and you are lucky to witness it first hand!! It won't hurt your plants.
