I can’t find any information on what to do once pineapple...

@QualityOregano Welcome to the Greg community. The mother plant slowly dies once fruiting is completed, but any large suckers or ratoons will continue to grow and eventually produce new fruit. A member of the Bromeliaceae family, pineapple plants react just as ornamental bromeliads. They die back and produce yet another generation. Pineapple plants belong to the Bromeliad family and the plant dies once it produces a flower or a fruit. I've never seen a pineapple that small before. Is this a particular type of pineapple different from what is sold in stores?
Oh. Nevermind. I did a Google lens on your photo. So apparently this isn't a regular pineapple. It's from the same family though. This is called Ananas nanus. Here is a brief description about it. But you can do more research on it if you like. But as a final answer to your question..... yours has ripened and is suitable to harvest. πŸ˜€ Enjoy!
I have this same plant. It turned the same colour as yours so i twisted it off and ate it. Very bitter. Then i twisted the crown off the pineapple and rooted it in water for about 2 weeks. It grew many roots and now it is sitting in some nice well drained soil and growing at a crazy crazy rate. I also had 3 pineapple suckers growing at the base of the mother plant which i left to alone until they were about half the height of the mother plant. I removed 2 suckers that were close together and repotted them and i left one on the mother plant to grow

@Lony thank you for your comments!! I’ve got about 4 babies in my pot so think I need to do some repotting of those as well as the crown. What did you do with the mother plant?
@QualityOregano i left the mother plant in its pot with one sucker. The sucker will grow and the mother plant will divert all its resources into the little sucker. So far, the biggest sucker from the 3 is the one that stayed on the mother plant
