Hi ya as @CleanHedera69 said it may be due to root rot and over watering purslane is very resilient plant that doesn't require watering daily and well draining soil for when you do water it also winter time can affect the growth of the plant and at the same time kill it off most plants during winter tend to move the energy to the roots that's way they can survive winter. In all leave it in a well lit area with more than 5 hrs of sun ð hope it improves

I'm glad to know how strong my plant is. It's been a few months since I've seen this happen, at first I just cut off all the dead bits hoping it will recover after a few sprits if Neem oil, but considering it's state I'll be doing a root check and repot it in a clean pot with different mix.
I was also hasty in using the new kitchen compost I've been making so that may have also introduced disease.
I'm going to post the repot here too so hopefully that does help and thank you again for replying.

@gardenspider you can always use a 70% of rubbing alcohol mixed with some water try a 50 50 mix of rubbing alcohol and water when watering with new compost good luck!!
