I’m worried about your dog. Snake plants are toxic to dogs so if your dog ingested some it can cause vomiting, nausea, diarrhea.

Your snake plant could still grow new shoots from the soil so I’d continue taking care of it like usual. If you don’t like the half broken leaves you could cut and propagate them
I'd say take the dog to the vet if he ate a lot of it...... 😒

Vet was called and since he only chewed the leaves and ripped the entire plant and pot apart but didn’t appear to consume any, we are monitoring him for symptoms! .. as for the plant, this was the only piece left that wasn’t ripped to shreds. Some damage done to the leaves and most of the root ripped off, is it salvageable and can it be potted right away?
You may want to start by water propagating if there isn't any roots. If there is a little bit of roots I'd say treat it like a offshoot or baby n just pot it up in soil n keep it just a bit more watered than usual since there's not many roots to get water to it as easy.
