The red tinge towards the bottom tells me your plant is happy. Some succulents will harden their stems to create better support for themselves, and as long as the roots aren't turning black, the plant is fine. Maybe you should consider repotting it into a porous pot with drainage holes and quick-draining soil, or continue with what you are doing and don't water it until it shows signs of needing water.
