It depends on the potting media and your environment. For me, it’s 10-14 days in winter and 5-8 days in summer. Phals need a wet and dry cycle - this is to mirror the cycle they get in the wild when they are attached to the trees they grow from, so they only need to be watered when the roots are silver and the media is dry or very nearly dry. It can be hard to tell and I use bamboo skewers that I keep in the pot to help guide me. If I pull the skewer out and it’s dry or cool to the touch, it’s time to water. I’m curious about what’s happening to your orchid in the last picture?! It looks like it has been rootless and you’re trying to get new roots? If so, this’ll need different care, but the leaves will will need to be able to get sunlight to get enough energy to make new roots. You can prop the orchid up on top of a glass of water, with the healthy roots dipped into the water. Keep the tip of the roots in the water for 3-4 days, then empty the water so the roots can dry for 2-3 days, then repeat (this is called the water culture method).
Personally I’ve watered my orchids once a week in the summer. I kept them in orchid bark with peat moss for a little water retention and it seemed to be happy 🌿

They’ll tell you when they’re thirsty by feeling their leaves! 🌱
I water mine every 7 days and they seem to do quite well. I've got them in clear pots which makes it easy to see if they're looking dry.
I water mine every 7-10 days. Basically when I think oh no! It’s been a while! That’s when I water them!
I put my moms into some sphagnum moss and orchid bark in self watering pot with a cotton string and it STILL has its blooms from Nov 2022 and seems very happy β€οΈπŸ˜†
