Is this an Edible cinnamon?
Best Answer
Hard to tell, there's 227 currently accepted species, but only 4 are mainstream for edible use. It is likely an edible species [Cinnamomum verum, C.cassia, C.burmannii and C.loureiroi are probably the most common. C.verum, or Ceylon Cinnamon, has thinner, lighter bark. Cassia-type cinnamon, which includes C.cassia, C.burmannii and C.loureiroi, have thicker, more orangey bark. The specific differences between the Cassia-types aren't very visual, they're more distinct in their taste and fat content.
Either way, if you wanna make your own cinnamon, the tree has to have to be at least 2-3 years old, when the trunk diameter is 1.5-3cm in diameter, but commercial operations use older trees at least 5-6 years up to 8-10 years when production will be at its peak. So expect to wait a long time.
