Yes! When the stem has just one bloom left, it should be cut down as far as possible. You should also remove blooms when they are withering- don't wait until they're completely dead. The plant expends energy on dying blooms, which could be used on the healthy parts!
but i dont have flowers but, what about if you want seeds
I've never seen violet seeds. They're usually propagated by cutting off a leaf and potting it in soil or water
