Why is my plant leaves crunchy

Welcome to Greg, Jordan!
Usually if leaves are crunchy it means under watering or sunburn... Can you tell us a little about how you care for this little guy? How often you water, what kind of soil it's in, how much sun it gets, etc?
I watered it like 3days ago and then the leaves started getting crunchy so I watered it because the soil was really dry the leaves started dying btw I use a grow light because it’s too cold outside for them
So you watered it three days ago and then again today, if I'm understanding correctly? If your soil is drying that quickly, you may consider moving your grow light father from the plant, or repotting it. The picture looks like it might be in terracotta, which actively draws moisture out of your soil. If it is, switching to plastic will help your soil stay moist a bit longer...

Also do you top or bottom water? It's super important that you soak the ENTIRETY of the soil, and not just the top. A lot of the time with top watering the water just drains straight through and doesn't actually have a chance to be absorbed...
