Sensitive plants are, well sensitive. They need perfect conditions to be truly happy.
An east facing window will not be enough light they need very bright light. A south facing window is best. If you can, use a sheer curtain in the south facing window so it still gets the very bright light but is protected from burn.
They use a lot of energy to open and close those leaves. That's why light is so significant. Bright direct light helps them store enough energy through protosythesis to be able to fold up and for the plant to stand upright. Without it you are guaranteed a droopy plant.
And yes cutting off dead branches will help it put out new healthy growth.
