Hi Joseph, allowing your ZZ to sit in water any longer than 15- 30 minutes and you are putting it at risk to get root rot, and die. You should definitely get it out of the water asap. Let it dry completely before watering. Sitting in water for a few days can absolutely kill the rhizomes. If they begin to rot, they might still be saved if you act quickly. Because these potato-like bulbs are designed to store water, prolonged exposure to soggy soil suffocates them, allowing destructive fungi to take over and turn them to mush.
Plant should never sit in water. Zz is the type once its soil is dry wait a week to water. It keeps its own water source at the base of the plant
