Why are a couple of my lucky bamboo turning yellow? Is it too much water?

It could be a couple of things. One being that the pot theyβre in is fairly large, making their root system unable to establish correctly because thereβs so much space. Iβd consider bundling them together and downsizing quite a lot in order to better support their root system. I also see in the description that thereβs no drainage, so it definitely could be too much water plus excess water due to having no drainage. Also lucky bamboo is a bamboo, they arenβt always supposed to be soaked in soil. If theyβre in water, changing the water suffices enough to keep the roots healthy. Last thing on top of all of this, it could be sun. Sometimes plants need a little extra sun in order to properly grow and keep their leaves. So, three things I would suggest would be to:
1.) Downsize the pot size and bundle, for now. Make sure there is drainage.
2.) Check the roots before repotting. Look for damage, rot, and a funky smell. If it smells horrendous, you know you have root rot, and there are treatments for that.
3.) Maybe give it a little more bright indirect light. Avoid direct light so the leaves donβt burn, but a distant sun kiss might be nice.
