A lot of the leaves seem to be wilting and becoming crispy on my plant. Am I watering it enough? Too much??

To me, your plant looks overwatered. The leaves that are drooping look a bit limp instead of crispy. Also, I think that's an Aglaonema, not a polka dot plant. In my experience, most of my Aglaonemas need less frequent watering than polka dot plants

Agreed- my aglaonema is very sensitive to being overwatered and does best in very well draining soil and a pot just big enough for its roots to avoid root rot.
