How do I stop my plants leaves from turning yellow?

Arrowheads love a good bit of humidity but they don’t love wet soil so much. I’ve had such a problem with them personally because I always overwatered them. I guess it could also be an issue of using tap water vs distilled/bottled water which plants seem to prefer.
