What's the difference between goal types? I've searched but haven't been able to find an explanation

Okay- let me tell you:

"Each plant as a range of days during which it can be watered and stay healthy before wilting. Your goal type will change how Greg ‘batches’ together your plants for water. ‘Growth’ will display a plant on the first day that it could be ready for water, ‘Ease’ batches as many plants together as possible while still keeping them healthy, and ‘Balanced’ is somewhere in between. Growth means you will have many water days with just a few plants, ease will have the fewest watering days with the greatest number of plants, and balanced is in the middle."
