I'd not let her eat it no matter what if she's trying. Some plants can be toxic to pets if ingested.
cats enjoy eating plants for various reasons, from digestive issues, to the plants tasting yummy, to just liking chaos (Jk they do it for enrichment when they're bored). If you are struggling with your cat eating your plants, you can try many anti-cat techniques like upside-down tape, rubber spikes, tin foil, and anything else the internet comes up with. Putting your plant somewhere hard to reach for your cat is helpful too. Just keep in mind many plants are toxic for cats and being eaten is not fun for plants either, so it's best to try and prevent this behavior.
My cats like to play in the dirt! They really do not like the plant, but like to play in the dirt. What I do is take plastic forks and put them all the way around my plant with the forks sticking outwards, and your cats will not bother your plants anymore. It’s not attractive, but your cats leave your plants alone. I have a cactus and a banana tree on the floor because they are in large pots and I have forks all the way around both of my plants. It’s quite the conversation piece when people come over, but the understand the process lol
