Elina is all babies now- should I pot them separately?
The original plant is almost completely gone (rescued her from a bouquet!) and while the babies seem quite happy do I need to pot them separately? And if so do I just chop the stalks and stick them in soil?

You should repot Pearl Echeveria pups once they have developed a decent root system and are noticeably growing beyond their current space, typically after a few weeks of being separated from the mother plant. This means waiting until the pups have had time to callous over and form new roots before placing them in their own pots with well-draining succulent soil.
Only repot when needed.
Don't repot a Pearl Echeveria pup unnecessarily, as it can stress the plant.
Signs to repot:
Roots appearing through drainage holes, significantly stunted growth due to pot size, or the pup becoming overcrowded in the mother plant's pot.
Proper potting mix:
Use a well-draining succulent soil mix to prevent root rot.
Allow callusing:
Before repotting, let the pup's cut end dry and form a callus to prevent rot.
