What is wrong with my new plant? Why is it turning yellow...

It's ok if it's a couple old leaves, but if it's new leaves continuing it could be lack of nutrients or overwatering. Unless this is happening often, I'd say the leaves are normal
I only brought the plant a week ago but it has been sitting on a shelf near reverse cycle air conditioning. The soil was very dry this morning and this is when I noticed the yellow leaves. Could it be drying out really quickly and need water more often?
Looking at your picture, the stuff you have on top of the soil holds in moisture, it would be best to have nothing. And β€œFluff” up the soil. Fluff the soil once a week, it helps get oxygen to the roots and helps keep the pests down. πŸͺ΄πŸœοΈπŸ¦Ž
Yellowing generally indicates a watering issue. What does your watering schedule look like?
