Insufficient Light.
String of Rubies thrive in bright, indirect light and can even handle some direct sun. Loss of it's characteristic purple coloration is a pretty good indicator that it needs more light.
Inadequate light can lead to etiolation, where the plant stretches out in search of light, resulting in long, leggy stems with fewer leaves, making the plant appear sparse.

You can try coiling the vines on top of the soil and pinning them down (hairpin, paper clip, or horticultural pins will work). While this hasnβt worked for me yet, I havenβt tried putting a plastic bag over the pot to maintain humidity while the vines take root. Thatβs my plan next time (I kill so many strings of things, itβs inevitable).
@phytologyfan @captainstardust thank you both for your input. It is greatly appreciated. I plant do implement both of your suggestion. I am going to start with some fresh soil. Wrap them around inside and pinned down. I will move to a brighter spot and create a little greenhouse for her. Wish me luck. Wish I could pick you both as best answer but I can't.
