As long as this is a fertile variety (I don’t think any seedless/infertile varieties exist, but they might), the yes you can harvest seeds from it. Wait for the fruit to mature, then harvest it and plant the seeds.

-side note/tip for planting: since may pop is a plant that grows in areas with cold winters, then it might need cold stratification. Cold stratification is just when seeds are exposed to a period of cold to trigger sprouting in the spring. This can be achieved through planting seeds in the fall or storing them in a wet paper towel in the fridge for a few weeks. I’m not exactly sure how it works for maypop so I highly suggest looking into that.
